1. Versatile Beef Bone Broth Soup

Bone broth should definitely be one of the food items in your thyroid diet, and even as an ingredient in some crockpot dishes. Rich in amino acids, it can also help naturally repair the digestive lining and ensure food and thyroid medication gets broken down and let your body absorb the nutrients. Simply gather 3 to 4 pounds of mixed beef bones along with the rest of the ingredients in this Platings and Pairings recipe. Cook everything on low for 18-72 hours, cool and strain the gelatinous fat.

  • 2 medium carrots, chopped
  • 3 celery stalks. chopped
  • 2 medium onions, chopped
  • 2 tablespoons apple cider vinegar
  • 1 bay leaf
  • 10-12 cups water

Make sure you cook the ground beef well first in a pan, then stir it in along with the vegetables and seasoning mix in the crockpot and cook on high heat for 6-8 hours.

  • 1 pound ground beef
  • 1 medium can navy beans, drained and rinsed
  • 4 cloves garlic, minced
  • 1 medium can organic black beans, drained and rinsed
  • 1 medium can organic chili beans
  • chili powder (2 tbsp)
  • 1 medium can organic garbanzo beans, drained and rinsed
  • 1 medium can Mexican-style stewed tomatoes
  • ash of cayenne pepper
  • ground cumin (1 tbsp)
  • 1 medium can whole-kernel corn with peppers, drained
  • paprika (1 tsp)
  • oregano (1tsp)
  • 1 medium red onion, chopped
  • Enough beef broth to cover all ingredients

3. Chicken and Beef Wild Rice Soup

Did you know that wild rice is rich in magnesium? Magnesium helps boost energy levels, something thyroid patients need to beat fatigue. It also comes with a slew of nutrients like amino acids, vitamin B6, folate, manganese, zinc, and iron, which are also needed to manage thyroid symptoms. Cook all, with the chicken breast slices on top of the wild rice, for 3-4 hours in high setting and serve.

  • 1 cup uncooked wild rice
  • 1 pound boneless, skinless chicken breast
  • ¾ cup celery, chopped
  • 1 cup onions, chopped
  • ¾ cup carrots, chopped
  • 4-5 cloves garlic, minced
  • 2 bay leaves
  • 6 cups low sodium chicken broth
  • 2 cups water
  • 2 tablespoons salt-free poultry seasoning
  • 3 tablespoons butter or ghee
  • 2 tablespoons olive oil
  • salt and pepper to taste

4. Southwestern Stuffed Peppers

Bell peppers are an excellent source of antioxidants, so do consider whipping this up for your next meal. To clean out the bell peppers, cut the tops off and remove the seeds and white pith inside. Mix the cooked meat, brown rice, corn kernels, salsa, chopped onions and the spices. Instead of water, pour in one-third cup of beef broth, cook on low for 6-8 hours.

  • 6 bell peppers
  • 1 pound lean ground turkey meat, browned and drained
  • 1 cup cooked instant brown rice
  • 2 cups salsa
  • 1 cup corn kernels
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 2 teaspoons salt
  • 1/2 cup chopped onions
  • 1 small can black beans, drained and rinsed
  • 1/3 cup water

5. Apple-Scented Venison Roast

Venison or deer meat is nutritionally healthier than beef, although you can use beef for this bone broth slow cooker recipe. Venison is also good for thyroid patients who can’t quit on meat, but need an alternative option that can help keep weight gain away. Start by lining the slow cooker with olive oil, then carefully place the meat, and then put the apples, onions, and garlic on top. Roast for 6-8 hours on low until tender, remove everything except for the drippinigs and add the beef broth to make sauce.

  • 1 tablespoon olive oil
  • 3 pounds boneless venison roast
  • 1 large apple, cored and quartered
  • 2 small onions, sliced
  • 4 cloves crushed garlic
  • 1 cup beef broth
